Gluten Free Nutella Cookies: Created for a birthday extravaganza

This post is long overdue and drafted 2 years ago, this recipe has stood the test of time and is good enough not to have to admit is gluten free :)

Gluten free lifestyle has lovers and haters for a variety of reasons, the most valid I believe being the taste and quality of the food.  Gluten free in the baking world is often "not swell" if you will. Maybe you are out there shouting because "It's not supposed to happen!!! Almonds aren't supposed to be flour!! French toast and pancakes aren't supposed to weigh half a ton!" Shout away. I do not disagree. For what it is worth, I have made major strides to limit my intake of goodies period gluten free or otherwise and have found I just feel better.

This was my first attempt at a gluten free cookie that uses none of those weird gritty flours that can muck things up in an instant. I made these for a super amazing person who had recently chosen gluten free "just because." I wanted to give him a dessert that worked for his birthday.

Adapted from  kirbiecravings.com Easiest Fudgy Nutella Cookies (see below, which was adapted from Canella Vita and Tasty Kitchen). Sorry if you would like me to keep going. This is the end of the line. I am not taking the Nutella family tree back farther than grandparentage. 

Gluten Free Nutella Cookies

Yield: 12-18

ingredients: 
1.5 cups gluten free oats (or not GF no one is judging you)
1 large egg
1.5 cups of Nutella (leaves you enough to still have a bit left over in the jar to enjoy by yourself)
1 cup semi-sweet chocolate chips
1.5 cups mini marshmallows (optional)
Nuts of any variety also optional

directions:
1. Preheat oven to 350 F.
2. Pre beat the egg (because that is what my mother has always said to do)
3. Combine the oats, egg and Nutella until you have a smooth mix.
4. Stir in chips and marshmallows and nuts if you choose
5. Make dough balls,  no larger than 1 1/2 inch in diameter. Place on cookie sheets, about 2 inches apart then flatten each doe ball. .
6. Bake for 15-20 minutes depending on your oven. check at 10 min when the cookies are mostly set remove from oven and place on cooling rack until completely set.
